This was my first time using Agar. It arrived timely. Nicely sealed. Smelled fresh. I made vegan cheese for the first time. I followed the girl online to cook the agar exactly as she did ( it seemed like way too long...but what do I know?)When I added it to the other ingredients it was like concrete. Even my faithful vitamix barely incorporated it into the cheese. Oh the racket! I even turned it off to see if I had left a plastic lid in there by accident!The cheese eventually came out beautifully. Next time I will use a little less and not cook it so long.This stuff certainly sets up well. I see no reason to cook it to death. Just as with my homemade puddings, I expect it to gel as it sets in the refrigerator.
